Acetic acid/əˈsiːtɪk/, systematically namedethanoic acid/ˌɛθəˈnoʊɪk/, is an acidic, colourless liquid andorganic compoundwith thechemical formulaCH3COOH(also written asCH3CO2H,C2H4O2, orHC2H3O2). Acetic acid is the active component ofvinegar. Historically, vinegar was produced from the third millennium BC, making acetic acid likely the firstacidto be produced in large quantities.
Acetic acid is the second simplestcarboxylic acid(afterformic acid). It is an importantchemical reagentand industrial chemical across various fields, used primarily in the production ofcellulose acetateforphotographic film, polyvinyl acetatefor woodglue, andsynthetic fibresand fabrics. In households, diluted acetic acid is often used indescaling agents. In thefood industry, acetic acid is controlled by thefood additive codeE260 as anacidity regulatorand as a condiment. Inbiochemistry, theacetyl group, derived from acetic acid, is fundamental to all forms of life. When bound tocoenzyme A, it is central to themetabolismofcarbohydratesandfats.
The global demand for acetic acid as of 2023 is about 17.88 millionmetric tonnesper year (t/a). Most of the world's acetic acid is produced via thecarbonylationofmethanol. Its production and subsequent industrial use poses health hazards to workers, including incidental skin damage and chronic respiratory injuries from inhalation.
